Mutabal is made by grilling eggplants to give them a distinct smoky taste, a signature characteristic of this dish. The eggplant pulp is then mixed with tahini (sesame paste), fresh garlic, fresh lemon juice and other traditional spices until it has a creamy consistency and an irresistible taste.
